[Heracleum maximum can be recognized by the presence of soft, slender hairs on a green to, less commonly, purplish stem (but never with raised purple botches); flat-topped inflorescences with 15-30 rays (each bearing an umbellet); and fruits that are obcordate (heart-shaped) at the apex.
